Strawberry Dishes: Soup, Salad, Pizza, Chips and Desserts (Part 1)

So we waited for the strawberry season! For me, the first ripe berries in the country are a symbol of summer. Yes, I agree: now you can find strawberries in large supermarkets almost all year round, but what kind of berries, where they are and what “seasoned”… But to collect from your garden – it’s a pleasure! As with other berries, fruits and vegetables, after all the hard work your harvest is especially valuable. Probably not only for me the best way to celebrate their merits – is to eat strawberries straight from the garden.

However, if the harvest is rich, even very diligent marking it not overpower — home at least something so will carry away. Go through, wash… And then what do you usually do? Will you mix it with sugar and milk or make jam or compote or freeze it? Of course, all these methods are good! Or maybe you should try something new and original? After all, strawberries are perfectly combined with a variety of different (and for many unexpected) ingredients – from vanilla and bananas to chicken and red pepper. Yes,you heard right! Just keep reading and you will find at least one recipe to your liking!

Strawberry gazpacho

Everyone is used to sweet dishes with strawberries. Have you ever thought about how to cook a salty dish? And after all such there is, and very even delicious! For example, strawberry soup. There is a gazpacho – cold soup-puree of fresh vegetables, so for sure and berry option will turn out no worse – that’s what the cooks thought and did not lose!

For preparations will need:

  • strawberries – 500 g;
  • tomato – 1 PC.;
  • bulb – half head;
  • parsley, dill, green onions – 50 g;
  • olive oil – 3 tablespoons;
  • lemon juice – 2 tablespoons;
  • salt, spices, cheese – to taste.

Cooking recipe:

  1. Scald the tomato and remove the skin.
  2. In a blender put strawberries, chopped tomatoes and onions, chopped greens and grind well.
  3. Add oil, lemon juice, salt, spices and beat a little more.
  4. When serving the soup can be sprinkled with grated cheese or add mozzarella.

Salad with chicken and strawberries

Strawberries go well with leafy salads, arugula, Basil and spinach, avocado, cucumber and tomato, chicken, Turkey and pork, flax seeds, almonds and walnuts, mozzarella, feta, hard and cottage cheese. You can season the salad with lemon juice or olive oil. So be creative, choose the ingredients to your taste and create a salad according to your own recipe, which may become your brand. I propose one of the possible options.

For preparations will need:

  • chicken – 2 Breasts;
  • strawberry – 5 medium berries;
  • Romaine lettuce leaves – 1 bunch;
  • Basil – a few leaves;
  • hard cheese – 50 g;
  • balsamic vinegar, salt, spices – to taste.

Cooking recipe:

  1. Lightly brown chicken, cut into big pieces.
  2. Cut the strawberries and herbs, grate the cheese.
  3. Gently mix the ingredients, add salt and spices.
  4. When serving, pour a little balsamic vinegar on the salad.

Strawberry pizza

Yes, and pizza can be sweet too! The classic basis of the yeast dough instead of tomato paste can be lubricated with chocolate or mascarpone, or cheese. It can be mono-pizza only with strawberries, and you can add other berries and fruits, sprinkle with chocolate, marshmallow, nuts or just cinnamon. Here is you the most simple (but very delicious!) example.

To prepare the basics you will need:

  • flour – 200 g;
  • yeast pressed or dry – 25 g or 5 g;
  • boiled water – 150 ml.;
  • sugar – 1 tsp;
  • salt – 0.5 tsp;
  • olive oil – 15 ml.

To prepare the filling you will need:

  • strawberries – 10-15 berries;
  • chocolate paste – 100 g;
  • chocolate – 50 g.

Cooking recipe:

  1. Prepare the dough: in warm water (about 40 °C) add sugar, yeast and two tablespoons of flour, mix well and put in a warm place for 15-20 minutes – to approach.
  2. Mix the flour, salt, oil and yeast mixture, knead the dough.
  3. Divide the dough (you can freeze the excess), form large balls.
  4. Ball roll in flour and gently stretch (do not roll) to the shape of the disc 25-30 cm in diameter.
  5. Bake the base in the oven for 15 minutes at 180-200°C.
  6. Cut the strawberries and grate the chocolate.
  7. Basis to get, lubricated chocolate paste, put the strawberries and sprinkle with chocolate.
  8. Bake the pizza in the oven for 5 minutes.

Strawberry bomboloni

Italian donuts will appeal to both children and adults. Yes, they are not as light as marshmallows, for example, but very tasty!

For the preparation of donuts need:

  • flour – 500 g;
  • eggs – 3 PCs.;
  • fresh yeast – 20 g;
  • sugar – 100 g;
  • butter – 90 g;
  • lemon zest – 1 tablespoon;
  • warm water or milk – 150-200 ml.;
  • oil for deep frying;
  • powdered sugar for sprinkling.

To prepare the filling you will need:

  • strawberries – 500 g;
  • powdered sugar – 300 g;
  • pectin – 5 g;
  • lemon juice – 1 tablespoon;
  • vanilla on the tip of the knife.

Cooking recipe:

  1. Yeast dissolve in 50 ml. warm water, add a teaspoon of sugar and a tablespoon of flour, leave to approach for 15 minutes.
  2. Sift flour, add sugar, eggs, zest and 100-150 ml water (how much dough), mix well.
  3. Add the sourdough and knead the soft elastic dough.
  4. Add the softened butter and mix it well into the dough.
  5. Powder the table with flour and knead the dough on it for 10-15 minutes until it becomes smooth and elastic.
  6. Roll the ball, put in a well-floured dishes, cover with film and leave in a warm place for an hour and a half.
  7. When the dough has risen, put on powdered with flour table, roll out to a thickness of about 1.5 cm and a glass cut out circles for 30-45 more to come – donuts should increase in size by 2 times.
  8. Deep fry the donuts.
  9. For the filling, puree the blender strawberries, put in a pan with a thick bottom, add sugar. Stirring, bring to a boil.
  10. Reduce the heat to a minimum, add lemon juice and continue cooking for 15 minutes, collecting foam.
  11. Add pectin and boil for another 10 minutes, allow to cool and thicken a little.
  12. With a syringe fill donuts filling and sprinkle with powdered sugar on top.

Strawberry caramel sauce

In my opinion, caramel sauce is truly one of the best edible pleasures in life! Taste – stunning, easy to prepare and fast. And there you can and just spoon and pour the ice cream and sandwich the cake, and spread on the toast… In the strawberry season of plenty to prepare such a great treat – an unforgivable mistake!

For preparations will need:

  • strawberries – 500 g;
  • sugar – 300 g;
  • water -180 ml.;
  • juice of 1 lemon.

Cooking recipe:

  1. Grind strawberries in a blender.
  2. In a small saucepan, mix sugar and water, boil over medium heat for 10-15 minutes, stirring gently until the sugar becomes Golden.
  3. Remove the syrup from the heat and, stirring constantly, add strawberry puree and lemon juice, be careful – the liquid will bubble and splash!
  4. Stir the puree and syrup until smooth sauce is smooth and return to heat.
  5. When the sauce will seethe, turn off the heat and pour into pre-boiled jars, leaving 1 cm to the cap.
