If you have ever taken aspirin for any pain, then relief came because this drug prevents the formation of eicosanoids and reduces the inflammatory process.

While acute inflammation is generally a positive factor for helping our body heal from damage (such as an inflamed throat during acute angina), chronic, systemic inflammation in the body leads to serious diseases. Modern doctors believe that hidden sluggish inflammation is the cause of serious diseases, including diabetes, cardiovascular, arthritis, dementia, depression and even cancer.

Eicosanoids derived from omega-6 are Pro-inflammatory substances, and those created from omega – 3 are anti-inflammatory. There is a competition between these substances: the more Omega-6 acids a person consumes, the more Omega-3 acids he should get. The less omega-6 fatty acids, the less Omega-3 is needed to neutralize them.

The high content of omega-6 fats in our diet and the low content of omega-3 is a very undesirable ratio for our body. But this is how modern urban man eats. Saturated fats, unlike unsaturated fats, have a higher melting point. That is why we are used to seeing butter in briquettes and vegetable oils in bottles.

TRANS-fats are unsaturated fats that retain hardness at room temperature. They are very toxic, and their use increases the risk of various diseases – cardiovascular, cancer, obesity, diabetes.

They are present in natural dairy products or in meat, but in very small quantities (up to 1 % in meat and up to 0.1 % in milk). In grain oils produced by the food industry, they are present in huge quantities. The researchers call the numbers from 0.56 % to 4.2 % – that’s how much of the product in each bottle of grain oil is toxic TRANS-fats. They are formed during the hydrogenation and deodorization of the oil. Margarine also contains 26 % TRANS-fat, and confectionery fat-33 %!

TRANS-fats are so dangerous that many countries have passed laws banning food manufacturers from using TRANS-fats. However, cheap vegetable oils and Margarines are widely used in the food industry: up to 10% of TRANS-fats are contained in bread products, up to 8 % – in cookies, up to 7 % – in sweets.

Grain oils are one of the foods most saturated with TRANS-fats.

From all of the above, it can be concluded that vegetable grain (seed) oils (along with white sugar and refined wheat), are the main causes of the epidemic of chronic diseases (cardiovascular, diabetes, asthma, arthritis, obesity, cancer), which today struck the civilized world. And anyone who wants to avoid serious health problems should be very careful and considerate about the choice of vegetable oils for their diet.

And what if, for example, health does not allow you to eat lard and butter? There is a way out – not everything is so sad. Because among vegetable oils there are quite suitable for food, and even useful.
