Ever need:

For 4 servings

  • 1 rabbit carcass (approximately 1.7 kg),
  • 2 bulbs,
  • 2 sweet pepper pods (yellow, red),
  • 0.5 chili peppers,
  • 1 zucchini,
  • 3 tablespoons vegetable oil,
  • 600 g tomatoes,
  • 100ml dry red wine,
  • 3 sprigs of thyme,
  • salt, ground black pepper.

Preparation:

1. Wash the rabbit carcass, dry it well on a paper towel and cut it into small portions. Add a little salt and pepper to taste.

2. Peel the onion and cut it into thin half-rings. Peel the pepper pods from the seeds and cut them into strips. Chop the chili pepper. Zucchini cut into slices.

3. In a large saucepan, heat the vegetable oil, put the rabbit pieces and fry on both sides until lightly browned. Transfer to a plate.

4. Put the prepared vegetables in the saucepan where the rabbit was cooking, and brown them over a low heat for 7 minutes, stirring occasionally.

5. Put the rabbit pieces on the fried vegetables and mix. Pour 250 ml of hot water or broth and simmer on low heat for 30 minutes under a lid.

6. Cut the tomatoes into slices, add to the saucepan with the rabbit and vegetables and simmer for 15 minutes. Pour in the wine, a little more water, salt and pepper and simmer for 1 hour.

Before serving, garnish with thyme.
