Ever need:

For the dough:

  • 100 g butter,
  • 60 g of sugar,
  • 250 g flour,
  • pinch of salt.

For the cream:

  • 2 oranges,
  • 3 eggs,
  • 200 g of sugar,
  • 3 tablespoons of flour.

Preparation:

  1. For the dough, cut the butter, combine with sugar, flour, salt. RUB with your hands and knead the dough. If necessary, you can add 1 tablespoon of cold water or sour cream. Leave for 1 hour in the refrigerator.
  2. Roll out the dough and put it in the form, making the sides. Prick with a fork and place in the oven, heated to + 190°C, for 15 minutes.
  3. For the cream, remove the zest from the oranges and squeeze out the juice. Beat the eggs with the sugar, add the juice, flour, half the zest and mix thoroughly.
  4. Pour the resulting mass on the cake and put it in the oven for about 1 hour at + 170°C (the top should be browned, a crust will form on the surface). Allow to cool, coarsely chop and garnish with the remaining zest.

7. Apricot pie

Ever need:

  • 250 g flour,
  • 150 g brown sugar,
  • pinch of salt,
  • 130 g butter,
  • 3 eggs,
  • 200 g of cottage cheese,
  • 70 g of powdered sugar,
  • 2 tablespoons sour cream,
  • 300 g of fresh apricots,
  • 2 tablespoons chopped pistachios.

Preparation:

  1. Mix the flour with 100 g of sugar and salt. Cut the butter into cubes and RUB with the flour mixture. Add 1 egg and knead the dough. Remove to the cold for 1 hour.
  2. Roll out the dough into a layer, put it in a form and bake at + 180°C until lightly browned. Beat the egg with powdered sugar, mix the cottage cheese and sour cream.
  3. Put the resulting mass on the baked cake, level it, put the apricot halves on top, sprinkle with the remaining sugar and place in the oven for 30-40 minutes. Sprinkle with nuts before serving.

8. Arctic meringue cake

Ever need:

For meringue:

  • 2 egg whites,
  • 100 g of fine sugar.

For the cake:

  • 150 g butter,
  • 150 g of powdered sugar,
  • 3 eggs,
  • 1 tablespoon baking powder,
  • 170 g of flour.

For the cream and decoration:

  • 500 ml of milk,
  • 2 tablespoons flour,
  • 200 g butter,
  • 200 g of sugar,
  • 2 egg yolks,
  • 100 g of berry jam,
  • 100 g of chopped nuts.

Preparation:

  1. For the meringue, beat the egg whites with the sugar, then set them on a baking sheet in the form of balls and bake for 2 hours at +80°C. Let cool.
  2. For the cake, beat the soft butter with 50 g of powdered sugar. In another bowl, beat the eggs with the remaining powder. Connect the masses, sift the flour with baking powder on top, mix thoroughly. Transfer the dough to the form and bake for 40 minutes at + 180°C.
  3. For the cream, dilute the flour with 250 ml of cold milk. Separately, boil the remaining milk, pour in cold, put on fire and bring to a boil again while stirring. Cook for 10 minutes until thick and then allow to cool. Beat the soft butter with the sugar and yolks, gradually continuing to beat, combine with the cooled milk mass.
  4. Spread the cake with warm jam, put a row of meringues, sprinkle with nuts, cover with cream. Next, spread the meringue, nuts and cream in the form of a slide. Put in the refrigerator for 2 hours.

9. New Year’s Cake

Ever need:

  • 6 ready-made sponge cakes.

For the cream:

  • 750 g of softened butter,
  • 300ml condensed milk,
  • 10 g of vanillin,
  • 2 tablespoons powdered sugar.

For glaze:

  • 200 g of bitter chocolate,
  • 150 ml of milk,
  • 80 g butter,
  • powdered sugar to taste.

For decoration:

  • 50-70 g of colored cooking mastic,
  • 15 g of cooking topping.

Preparation:

  1. Prepare the cream. Beat butter with condensed milk with a mixer, adding vanilla and powder.
  2. Prepare the icing. In a saucepan over low heat, melt 2 chocolate bars. Continuously stirring, pour in the milk. As soon as the mixture gets a uniform consistency, add the butter. Add powdered sugar. Bring to a boil and remove from heat, allow to cool slightly.
  3. Blot the cakes with cream. On top and on the edges of the cake, smooth the cream with a knife. Pour the warm glaze evenly over the top.
  4. From mastic to mold “snowman” and “Christmas trees”. Decorate the cake until the icing is frozen. Let stand overnight in a cold place.

10. Cake “Happy new year!”

Ever need:

  • 200 g flour,
  • 100 g butter,
  • 4 eggs,
  • 1 Cup sour cream,
  • 1 Cup sugar,
  • 0.5 cups cocoa,
  • 1 teaspoon of baking soda,
  • 0.5 teaspoons of salt,
  • 30 g of butter for greasing.

For the cream:

  • 2 cans of boiled condensed milk,
  • 350 g of butter.

For decoration:

  • 100 g of chocolate,
  • decorative sprinkling.

Preparation:

  1. Prepare the dough. Using a mixer, beat the softened butter and sugar. Continuing to beat, add eggs one at a time, then sour cream. In a separate bowl, mix the flour, salt, soda and cocoa. All combine and mix well.
  2. Grease the baking dish with oil and fill it with 1/3 of the dough. Bake in a preheated 180°C oven for 40 minutes.
  3. Prepare the cream. Beat the softened butter. Add condensed milk and mix.
  4. Cool the cake and cut it lengthwise. Cover the cakes with 1/3 of the cream. With the remaining cream, grease the cake on top and on the sides.
  5. Decorate if desired with melted chocolate and decorative sprinkles.
