Our kids, as well as older kids love pancakes, especially with sour cream, jam and condensed milk. We invite you to expand your culinary collection with new recipes of this truly homemade baking and congratulate your loved ones on the beginning of summer!
For you: traditional lush pancakes with jam, pancake with walnuts, pancakes with cottage cheese, Apple, potatoes, corn and even cucumber, as well as rice pancakes with cheese. During the summer you can try everything.
1.Pancakes “Lush”
Ever need:
- 250 ml kefir,
- 2 eggs,
- 240 g flour,
- 2-3 tablespoons sugar,
- 0.5 tsp salt,
- 0.25 teaspoons baking soda,
- 3 tablespoons vegetable oil.
Preparation:
- Using a mixer beat the eggs into a light foam in a refractory dish, gradually adding sugar. Then add the yogurt. Stir well.
- Put on low heat. Stirring, heat to +40°C and remove from heat. Gradually pour the sifted flour into the warm mixture. Add salt, soda, mix. Pour 1 tablespoon of vegetable oil. Beat the dough with a mixer.
- On a hot frying pan with butter spread a tablespoon of dough. Fry on medium heat for 1-2 minutes until Golden brown.
2. Delicious pancakes
Ever need:
- 2 eggs,
- 3 tablespoons granulated sugar,
- 150 ml of kefir and milk,
- 1 pinch vanilla,
- 1 teaspoon baking soda,
- 250 g flour,
- 70 g walnuts,
- 100 g of honey.
Preparation:
- Beat eggs with sugar, add kefir and vanilla. Add baking soda, flour and mix thoroughly to avoid lumps. Then gradually, with constant stirring, pour warm milk. In a frying pan with non-stick coating bake small pancakes (1 tbsp. spoon of dough on a pancake) and place them on a plate.
- Nuts fry in a pan without fat and then chop. Melt honey and mix with nuts. For each pancake, put 1 teaspoon of cooked honey and nut mass, fold on top of each other and serve.
3. Cottage cheese pancakes
Ever need:
- 200 g cottage cheese,
- 200 g flour,
- 2 eggs,
- 200 ml of natural yogurt,
- 3 tablespoons sugar,
- pinch of salt,
- 1 teaspoon baking powder,
- 2 tablespoons butter,
- berries for decoration.
Preparation:
- Beat eggs with sugar, add melted butter, salt, yogurt and cottage cheese, mix well. Sift flour and combine with baking powder. Both masses connect and mix.
- Spread the dough with a large spoon on a frying pan heated with vegetable oil. Bake until Golden brown.
4. Pancakes with apples
Ever need:
- 150 g muesli,
- 600 g of kefir,
- 2 eggs,
- 100 g sugar,
- 200 g flour,
- 1 teaspoon baking soda,
- pinch of salt,
- 200 g of sliced apples,
- 3 tablespoons vegetable oil + for frying oil,
- 250 g sugar,
- Apple jam.
Preparation:
- Muesli, pour kefir. Mix eggs with sugar. Add muesli, sifted flour, soda and salt. All well hinder. In the dough for pancakes add sliced apples, vegetable oil and mix gently.
- On a well-heated pan with vegetable oil spread a tablespoon of dough for pancakes at the rate of 1 spoon per 1 pancakes. Bake until Golden brown on both sides.
- Hot pancakes put on a plate, allow to cool slightly. Serve with Apple jam.
5. Pancakes with potatoes
Ever need:
- 8 medium potatoes,
- 0.5 cups of flour,
- 1/3 Cup milk,
- 1 egg,
- 1 teaspoon salt,
- 3 tablespoons refined vegetable oil,
- sour cream to taste.
Preparation:
- In a Cup, knead the dough from flour, milk, eggs and salt. Stir until smooth. Wash potatoes, peel and grate on a coarse grater immediately into the dough. Mix again to evenly distribute the potatoes in the mass.
- In a pan with a thick bottom over high heat, heat the sunflower oil. A tablespoon pour the batter into the pan and smooth the top. Fry on medium heat for 3-4 minutes on each side.
- After the pancakes are browned on both sides, hold them under the lid for a couple of minutes on low heat before removing from the pan. They’re better baked that way. Serve hot.
6. Rice pancakes with cheese
Ever need:
- 3 eggs,
- 100-150 g hard cheese,
- 50 g flour,
- salt to taste,
- bunch of young onions,
- 200 g rice,
- freshly ground red pepper,
- freshly ground black pepper.
Preparation:
- Rice boil until tender, and then give him a bit cool down. Peel the onion and cut into rings. Place the boiled rice in a deep container. Onion wash, cut into small pieces. Cheese to grate on a large grater.
- In rice drive eggs, add flour, mix thoroughly with a fork. Add salt and pepper, add cheese and green onions.
- Heat vegetable oil in a frying pan. Spoon the rice mass into the pan. Pancakes fry on medium heat for 2-3 minutes on each side until crispy. Serve hot, if desired — with sour cream.
7. Cucumber pancakes
Ever need:
- 4-5 large cucumbers,
- 1 egg,
- pinch of salt,
- 3 tablespoons flour (or semolina),
- 1 tablespoon starch,
- 1 tablespoon sour cream.
- 2 tablespoons mayonnaise,
- 2 tablespoons sour cream,
- 1 teaspoon minced mustard,
- 1 pickle,
- spices, butter.
For Tartar sauce:
Preparation:
- Cucumbers wash, peel and cut in half. Use a teaspoon to select the seeds. Cucumbers grate on a fine grater, add the egg, flour, sour cream, starch, salt, pepper and mix well.
- In a frying pan, heat the vegetable oil, put a spoon dough. Pancakes fry on both sides over medium heat until Golden brown, then put on a paper towel to stack excess fat.
- For sauce pickled cucumber finely chop. Mix mayonnaise, sour cream, mustard, cucumber, season. Serve with pancakes.
8. Pancakes with corn
Ever need:
- 200 g canned corn,
- 1 pod of red sweet pepper,
- 2 eggs,
- 6 tablespoons olive oil,
- 150 g flour,
- 1 teaspoon baking powder,
- 100 g leaf lettuce,
- 70 g spinach,
- 2 garlic cloves,
- 30 g green onion,
- 1 tablespoon orange juice,
- salt, ground black pepper.
Preparation:
- Put the corn on a sieve and let the liquid drain. Pod sweet pepper wash, dry, remove the core with the seeds, finely chop the flesh. Beat eggs with 1 tablespoon of olive oil.
- Sift flour with baking powder, connect with eggs. Add corn, sweet pepper, salt, pepper and mix thoroughly. From the resulting dough, shape the meatballs and fry in 3 tablespoons of olive oil.
- Lettuce and cress wash, dry and tear. Garlic clean and cut. Wash, dry and cut the onion. Orange juice lightly whisk with the remaining oil, salt and pepper. Mix with lettuce and garlic. Pancakes from corn lay out on green salad and serve on the table.
