Today I want to touch on the topic of unusual or even exotic cultures. We will talk about Physalis philadélphica, which, of course, can not be called ordinary. Its fruits can be consumed both in fresh form (salads), and cook stewed meat, caviar, marshmallows, candied fruits from them. The pickled physalis philadélphica also has a very original taste. And what a beautiful and delicious jam it turns out! I don’t like the taste of fresh physalis philadélphica (even the ripe fruit resembles a green tomato), so I always make jam out of it.

For cooking you will need:

  • ripe fruit – 1 kg (2.2 pound);
  • sugar – 1-1,2 kg (2.2-2.6 pound).

Recipe:
      1. I release the fruit from the lids, wash it with hot water.
      2. Since the peel (and the fruit pulp itself) is quite dense, I deeply pierce each toothpick in 2-3 places.
      3. Then boil the syrup: I take 0.5 kg (1.1 pound) of sugar per 300 ml of water.
      4. And then comes the most creative moment! To improve the smell and refine the taste of the finished jam, I (most often) add half a lemon, sliced (along with the peel). It gives the jam a pleasant citrus smell and a slight sourness.

In general, you can add anything you like: lime, orange, cinnamon, vanilla, ginger, grapefruit, pineapple! Naturally, the taste and smell of jam will change, but this is good: choose what you like best!
     5. I let the syrup cool, then add the fruit to it, put it on a slow fire. Be sure to stir the syrup so that the jam does not burn and warms up evenly.
     6. Once the syrup boils, simmer for 2 minutes and set aside. After cooling down, put it back on the fire and let it boil for another 2 minutes. Gradually add the remaining sugar. And so on until a drop of syrup stops flowing on the plate. Of course, this method of preparation will take more than one day, but the fruits will remain whole, translucent. They have a lot of pectin, so the syrup in the finished jam resembles jelly in consistency.

Now I will briefly tell you how I do it. It is undemanding to the composition of the soil, prefers sunny places, and is drought-resistant. Seeds are sown in the open ground in April. I water the seedlings as needed, fertilize them exclusively with organic matter. I weed the weeds, we grow the bushes and tie them to the supports. This is all you need for a good harvest.
